Sprouting time of tomatoes and knowing when to harvest

What is the average sprouting time of tomatoes in the UK? And how do you know when they are fully ready to harvest?

"At a temperature of 21oc, tomato seeds usually germinate in 7 - 14 days. You’ll start picking about 60-85 days after planting seedlings in the garden. Harvesting tomatoes continues until frost (if you have some indeterminates in your crop)."
