What paint sheen is best?

Why should I go with a higher sheen paint? And when is a lower sheen paint more suitable? Also, generally, what are the pros and cons of these paints?

"If it is an emulsion for walls and ceilings, Matt for the ceilings, vinyl Matt for the walls as it’s not too shiny and can be wiped clean.
For the wood finish, Eggshell is a low odour and a nice finish. Satin for wood is also a good finish and doesn’t lose its colour so quickly. Gloss (especially white) will give a high sheen but is the most likely to yellow over time"

"If you're looking for the best paint sheen for your bathroom or kitchen, it's best to go with at least an eggshell sheen. For optimal results, use a semi-gloss sheen. It's not overly shiny and the extra gloss acts as a barrier for moisture and drips."

"Gloss is a higher sheen if that's what you are looking for and I would use a water-based gloss as it stays whiter longer oil-based paint turn yellow after time because of the oils in the paint"
