Is there a better season to start or does it not really matter in practice?

In practice it doesn't mater , it will have no impact on the overall outcome, building practice, it may take a little longer if the weather is particularly wet but a good builder will get the job done.

In practice it doesn't matter that much, starting in the middle of winter can bring up some challenges, the shorter days can prolong a project. Apart from that you will good to start any time !

There’s not really a problem with when you start but in winter you have weather to deal with sorter days this time of year is probably better but you have the heat

Mid  April start of the summer on words till September 
It does  matter sometimes because of rain and

I’ll find the best time to do building extensions from my personal point of view is in the months August September and October the working conditions are much better and temperatures are more workable with all materials but this is just a personal opinion
