Do I need an inset sink?

Are inset or undermount kitchen sinks the right type for using with taps that go through the worktop or wall?

"Yes . Normal taps will sit in the sink holes that are made by the manufacturer of the sink but an undermount sink will not have any holes except for waste and overflow so the worktop or wall is where these taps are mounted."
