Coursed rubble walls

I've been told my home is made of coursed rubble masonry and that a small extension should match the original. How do I find the right stonemason for this and will it take a lot longer to build walls in this style?

"A local mason should be familiar with what’s needed. Yes of course it will take longer than throwing up a brick and block cavity wall"

"Yes it will take longer in Coursed Stone, but you should find a good Stonemason easily as he will give you a perfect matching Extension…
Hope this helps…"
